Display sushi made with acidified rice safely
• You must store:
◦ nigiri pieces between 5°C and 15°C for no more
than 8 hours, or else throw them out,
◦ nori rolls between 5°C and 15°C for no more than
12 hours, or else throw them out.
(The times above include any time the acidified rice was
between 5°C and 15°C before the sushi was shaped)
